Steps to make Paalak patta chaat:
  1. Wash and remove stem from spinach leaves. In a bowl combined gram flour,salt and eno along with sufficient water to make a dropping consistency batter. Mix well and keep aside.
  2. Heat oil in a kadhai. Dip each spinach leaf in a gram flour batter and coat it completely. Gradually put them into the hot oil and deep fry until golden brown in colour on low flame. Drain them on an absorbent paper.Fry all spinach leaves like this.
  3. To make the paalak patta chaat arrange the fried spinach leaves in a plate. Place onion and potatoes on each of the fried spinach leaves.Next spread each green chutney and sweet tamarind chutney on spinach leaves as required. Top this with curd.sprinkle green chilli and ginger. Finally sprinkle red chilli powder,cumin powder,salt and chaat masala. Garnish with sev and coriander leaves and serve immediately.
