Dot the feta cheese and frozen peas around the dish, then pour the beaten egg into the dish, making sure it's evenly covered. Bring the potatoes to the boil in salted water. Put the peas in a bowl, pour over boiling water and leave until you're ready to add them to the frittata. If you're using fresh peas, cook them with the potatoes.

  1. Slice the new potatoes and fry in a little oil until golden and crispy. Half way through add some frozen peas and some of the sliced red onion.
  2. While the potatoes are cooking whisk up four eggs and season with salt and pepper. Add to the pan and start the cooking process on the hob. Once the bottom has started to firm up place the pan in a preheated oven at 180c. Cool for 10-15 minutes or until the egg mixture is starting to firm up
  3. I topped the frittata with a simple salad of sliced red onion, tomatoes, feta, olives and herbs

Put the peas in a bowl, pour over boiling water and leave until you're ready to add them to the frittata. If you're using fresh peas, cook them with the potatoes. Mix together onions, tomatoes, peas and potatoes then spread half the vegetable mixture over the base of the pan. Sprinkle over half the cheese then top with the remaining vegetable mixture. In a bowl beat together eggs, milk, and salt and pepper to taste.
