  6. Take 150 g coarsely chopped walnuts

  1. This recipe involves a relative amount of preparation. In order to save time start with the beetroot and spring onion and begin step 2. You can prep the other ingredients during step 2.
  2. Heat the oven to 200 degrees (180 fan). Add the beetroot and spring onion with a splash of oil to a pan, on a medium heat, for 7 minutes. Add the walnuts to the oven for the same amount of time.
  3. Put the beetroot mix and walnuts to one side to cool. Add the rest of the ingredients to a large mixing bowl.
  4. Once the beetroot and walnuts have cooled to a temperature suitable to touch. Add them to the mixing bowl. Use your hands to mix all of the ingredients together (note: beetroot has a habit of staining everything in sight, if you want to avoid purple hands, wear polythene gloves!)
  5. Line a baking tray with grease proof paper. Take a large handful of the mix, using two hands compact the mix into a ball and place on the baking tray. Do this with all of the mix (6 burgers). Now take a second baking tray and rest it on top of the ball (bottom side down) push this tray down until the patties are approximately an inch (2.5cm) thick. Remove the top baking tray and place to burgers in the oven for 25 minutes, turning half way through.
  6. I chose to serve my burgers on toasted brioche, with hummus, toasted pine nuts and some alfalfa sprouts, alongside buttered and salted green beans BUT potato fries would work just as well 😋
