  3. Take one tortilla, spread cocktail sauce. Then on one half of the roti add spinach, finely diced orange bell pepper, a bit of garlic, crumbled feta cheese. Sprinkle salt & crushed black pepper. Cover with the other half.
  4. Take a flat pan, add butter & heat the quesadilla on medium flame (not high) so that it crisps up on both sides. Cut slices & enjoy!

Lightly grease a large pan with butter or olive oil and place over medium heat. Evenly top with half of the spinach feta filling. Sprinkle with a few red pepper flakes (if using). Heat a large non-stick skillet over medium heat for a few minutes. Melt butter in a skillet and place a tortilla on it.
