The ingredients needed to make Stuffed Spinach & Feta Mushrooms:
- Get 4 large steak mushrooms
- Prepare 1 small white onion or 1/2 large onion
- Make ready 2-3 minced garlic cloves
- Make ready 150 g baby spinach
- Take 1 slice feta
- Make ready Origanum
- Prepare Splash olive oil
- Prepare Grated parmesan & mozzarella or cheddar
- Get Optional: 6 pieces sundried tomatoes, pepper or olives (chopped)
Take out from the water and place into a prepared bowl with ice water. Dip each spinach leaf in boiling water and then place it on a flat surface. Put a little stuffing in the middle of each spinach leaf and roll it up tightly from one end to another. Place the stuffed spinach on a serving plate and pour the prepared tomato gravy over it.
Steps to make Stuffed Spinach & Feta Mushrooms:
- Preheat oven to 180 degrees Celsius
- Remove stalks using a spoon or knife from mushrooms and cut up the stalk
- Finely chop onion, and add garlic to saute in olive oil for 3 minutes or until onions become slightly translucent. Add the cut up mushroom stalks
- Roughly chop rinsed spinach and add to pan. Place lid on pan. Stir occasionally. Season with oreganum and pepper
- Once spinach is cooked, remove from heat. Crumb the feta into the mixture (add olives/ sundried tomatoes - optional)
- Place mushrooms on an oven tray and cook for about 5 - 7 minutes or until the mushroom sweats and there is liquid inside the mushroom
- Remove mushrooms from oven and drain liquid from mushrooms
- Fill mushrooms with spinach feta mixture and add grated cheese on top
- Bake till cheese slightly browns
Put a little stuffing in the middle of each spinach leaf and roll it up tightly from one end to another. Place the stuffed spinach on a serving plate and pour the prepared tomato gravy over it. In a medium bowl, combine the spinach, Boursin cheese, sour cream, salt and pepper and ¼ cup of the shredded parmesan. Stir until ingredients are well combined. Divide the mixture between the tomatoes.
