  4. After 5 minutes, remove the tin from the oven and add the tomato halves face down and drizzle with a little oil. Pop back into the oven for another 10-15 minutes
  5. Add the leaves to a salad bowl
  6. Dice the Cucumber into small segments and add to the bowl
  7. Finely dice the spring onions and add to the bowl
  8. In a separate pot/bowl add 1 teaspoon of pesto and a generous glug of olive oil, season with salt and pepper and mix with a spoon
  9. Add the pesto mix to the salad bowl and mix thoroughly with the ingredients
  10. Once the skin of the tomatoes and pepper are wrinkly, remove the tin from the oven and allow to cool
  11. Add the roasted tomatoes straight to the mixture
  12. Peel the skin off of the pepper and chop into small pieces, before adding to the mixture
  13. Crumble the goats cheese into the salad and mix well
