Heat the oil in a large frying pan. Using a fork for a coarse texture or a blender for a smooth dip, combine the aubergines with the lemon juice, garlic, yogurt, half the olive oil and half the chopped parsley. Season to taste, then spoon into a serving bowl. Just before serving, drizzle with the remaining olive oil, then scatter with the remaining parsley and the pomegranate seeds.

Steps to make Aubergine Dip:
  1. Wash, wipe then slit aubergine in various places and insert garlic slices.
  2. Place aubergine directly on the burner and cook until the skin is charred, turning every few minutes for around 6-8 minutes or until done
  3. Wrap aubergine in cling foil and let it cool, remove charred skin and roughly chop
  4. In a hot skillet add olive oil, onions cook until translucent, add chopped chillies, garlic and ginger paste, cook for another minute or two, now add salt and pepper, aubergine and mix well, add peanuts and cook until warm, garnish with coriander or parsley and set aside to cool
  5. Serve with crackers or toast with a lovely glass of wine or beer or whatever

Season to taste, then spoon into a serving bowl. Just before serving, drizzle with the remaining olive oil, then scatter with the remaining parsley and the pomegranate seeds. Prick the skin of the aubergine in several places and place on the baking tray. Cut the aubergine in half, scoop out the pulp and cut into pieces. Transfer the aubergine to a bowl, then mash with a fork or blitz with a hand blender, but don't make it completely smooth.
