  2. Mix the salt with the warm water until the salt is fully dissolved. Add the tablespoons of cold water.
  3. Next cut the aubergine into reasonably thick slices.
  4. Place them in a bowl as flat as possible.
  5. Add the brine mixture. Cover with a plate and weigh it down.
  6. Leave to soak in the brine for 30 minutes then turn and leave another 30 minutes.
  7. Heat up the coals or grill.
  8. Drain the aubergine and pat dry with kitchen roll or a clean tea towel.
  9. When the coals/grill is ready. Brush the aubergine on one side with olive oil and add it oil side down. Cook for 3-5 minutes on one side and repeat on the same side.
  10. Drizzle the olive oil and garlic mixture on top of the cooked aubergine and serve warm.
