- Get 1 bag of mozzarella cheese
Add a layer of fried eggplant (it's okay if they overlap a little), a handful of Grana (or Parmigiano) cheese, a pinch of salt, slices of mozzarella, and chopped basil leaves. Keep alternating layers of ingredients: First the eggplants followed by grana cheese, mozzarella, basil, and finally tomato sauce. Then layer the eggplant on top. Season eggplant slices all over with salt and place on baking sheet in a single layer.
Instructions to make Eggplant Parmesan:
- Set egg and breadcrumbs into 2 seperate bowls
- Peel and slice eggplant
- Line bottom of baking pan with spaghetti sauce
- Dip eggplant slices into egg then breadcrumbs
- Place in pan and cover with cheese combined. Add more sauce to top.
- Continue till tray is full and layered like lasagna.
- Bake at 350 for 35-40 minutes. And Enjoy!

Eggplant Parmesan is one of all my all-time favorite comfort foods.
