Prepare grill for direct-heat cooking over medium-hot charcoal (medium-high heat for gas). Score the lamb and place the sprigs of rosemary in each score. Drizzle over the olive oil and season with salt and pepper. Balsamic vinegar - this is where the sweet factor comes into play.
