Instructions to make Mushroom & Pumpkin Laksa:
- Cut the mushrooms into quarters. Wash and peel the pumpkin, cut into small pieces, cut the broccoli with stems. Cut the garlic and ginger and green chilli fine.
- In a wok heat oil and add chopped garlic, ginger and green chilli. Stir until raw smell of garlic leaves. Add spring onions and stir for a minute. Add pumpkins, salt and cook for 2-3 mins.
- Add 1.5 cups vegetable stock and cook covered for 5-7 mins until pumpkin softens. Set aside to cool.
- Put the pumpkin into a blender and blend smooth. Bring it back to the pan and add 1/2 cup vegetable stock if you want and add mushrooms, broccoli, and cook for 5 mins.
- Add black pepper powder and coconut milk and cook on low flame for 15 mins. Set aside.
- For plating and as a side dish boil noodles, julienne carrots. When plating put the noodles into the soup bowl, pour the thick mushroom & pumpkin laksa and garnish with pomegranate, peanuts, spring onion greens, red chilli and a sprig of coriander leaves. Enjoy 😊.
