A dough that is rolled out as a flatbread; a mankoushi can be topped with cheese, zaatar, vegetables and almost anything that comes to mind. Manakish Also spelled manaqish or manakeesh in its plural form, man'ousheh or mankousheh in its singular form, this flat bread is from the Levantine cuisine (Lebanon, Syria, Palestine…). It is usually topped with zaatar : a mix of spices like sumac, sesame seeds, dried herbs and olive oil. But it can also be topped with cheese or ground meat.

Instructions to make Manakish:
  1. In a bowl, mix together yeast, sugar and lukewarm water. Cover and keep aside for 10-15 minutes.
  2. In another bowl, take flour and salt to taste. Make a well in the center and add 1 tbsp. oil. Combine everything well and add the yeast liquid. knead into a dough. Cover with a cling film and keep aside for an hour.
  3. Meanwhile in separate individual bowls, mix together zaatar and idli podi with some olive oil and keep aside.
  4. Divide the dough into 6-7 equal portions. Roll out each portion with your hands into a small round disc. You can also roll the same by dusting some flour.
  5. Spread the zaatar mix, idli podi mix and the cheese on it according to your preference.
  6. Bake in a preheated microwave oven at 180 degrees C for 12-15 minutes (depending on your oven). Serve with hummus, any dip or just relish as it is.
