However in Mangalore the sajjige is made with a little extra water making it extremely mushy and of paste consistency. If you prefer it that way, you can add a little extra water to the above ratio - make sure the salt & sugar ratio is also adjusted accordingly. Here is the recipe of wheat upma, which is easy, quick and very tasty. Sajjige-Bajil, as it is called in Tulu, is a delightful match made in a Mangalorean kitchen, combining two delightful dishes viz. the savoury semolina pudding and the spicy-seasoned beaten rice.

The ingredients needed to make Mangalore Style Upma:
  1. Take 1 cup rava / semolina
  2. Take 2 tbsp oil
  3. Take 1 tsp mustard seeds
  4. Take 1/2 tsp urad dal
  5. Prepare leaves curry
  6. Get 1/2 onion, finely chopped
  7. Make ready 2 green chilli, finely chopped
  8. Get 1 inch ginger, finely chopped
  9. Prepare 3 cups water
  10. Take 1/2 tsp sugar
  11. Make ready 1/2 tsp salt
  12. Take 1 tsp ghee / clarified butter

Moong Dal (yellow dal) is a healthy Indian comfort food prepared from yellow split lentil (green split gram without skin) Every time we think of an upma we think of wheat or the rava (semolina). Needless to mention upma stands out to be one of the many healthy breakfast and evening snack options as it is made using the simplest and low fat ingredients. Very simple and easy to prepare, it is an ideal dish for those looking forward to shed weight. Upma is a flavorful South Indian breakfast dish made from rava or cream of wheat.

Instructions to make Mangalore Style Upma:
  1. Firstly, dry roast 1 cup bombay rava on low flame for 2-3 minutes. now in a large kadai heat 2 tbsp oil and add 1 tsp mustard, ½ tsp urad dal,and few curry leaves.add in ½ onion and saute well.also saute 2 green chilli and 1 inch ginger. - * now pour 3 cups water and get to vigorous boil.
  2. Further add ½ tsp sugar, ½ tsp salt and 1 tsp ghee. mix well. - * keeping the flame on low start adding roasted rava slowly, stirring continuously in another hand. - * cover and simmer on low flame for 5 minutes or till upma is cooked well. - * finally, serve rava upma / uppittu with coconut chutney or plain.
