Mandi is a delicious combination of rice, chicken and a mixture of spices. Traditionally, Mandi is cooked in a tandoor but this is our version to make the Mandi at home on a stovetop. Mandi is considered as healthy meal when compared to our traditional Indian biryani, as we use less oil in the recipe. Homemade Chicken Mandi Recipe Traditionally the Mandi is cooked in a clay oven built in ground called as (Taboon) mixing together spices and water along with meat.

  2. This is how to make my mandi spice, heating up the pan add coriander seeds, cloves, green cardamom sticks, cinnamon sticks and lemon zest, roast them off the heat and let it cool down, then grind them to a fine powder.
  3. Add mandi spice garlic paste, salt, curry black pepper, turmeric, vegetable oil, lemon juice and seasoning cubes
  4. Add oil and lemon juice to the spice and mix them well
  5. Remove all chicken skin and cut it into 2 parts
  6. Marinate the chicken
  7. Cover and keep in the fridge for 2 hours.
  8. Heat up vegetable oil in the pan/pot
  9. Add onions and salt
  10. Fry it till onion turns in to golden brown.
  11. Add cloves and mix together
  12. Remove some brown onions to use it for garnishing
  13. Add 2 cups of water, then add salt and seasoning,
  14. Stir it properly
  15. Then add in mandi spice, curry and tomato paste mix and cook on high flame
  16. Add the rice (washed and soaked for 1 hour) into the stock
  17. Then mix well
  18. Place the rack on top of your pot, then bring the marinated chicken and place it on the rack, transfer the entire things into the oven.
  19. Cook it at 180 degree Celsius for 30minutes
  20. After 30 minutes remove it from oven, then sprinkle some brown onions and mix the rice
  21. Your chicken mandi is ready to serve👍👌
