The ingredients needed to make Manda Pitha:
  1. Take 2 cups semolina/rava/sooji
  2. Get 1/2 cup fine sugar
  3. Make ready 1 cup grated coconut

  6. Get 2 tsp Ghee
  7. Prepare 2 cups refined oil for deep frying

Keep stirring it in low heat until all water is absorbed and it forms into a ball. Turn off the gas and cover the dough. After a lot of brainstorming, I planned for something very much rustic and authentic. Not much complicated yet very precious flavours.

Steps to make Manda Pitha:
  1. First make the coconut stuffing, for that dry roast the grated coconut in a pan for few minutes. Then add the jaggery or sugar to it & stir continuously until the excess water dries off.
  2. Now we are going to make a simple sugar syrup. For that boil water & add the sugar to it & wait until the sugar dissolves. Add cardamom powder and 2 tsp ghee to it & boil it for a couple of minutes more. Then lower down the heat & add the semolina little by little & stir continuously.stir for 2-3 minutes. You can add warm water if the mixture turns too dry & hard to stir.
  3. Now cool it down a bit. Then knead the semolina mixture with ur hand until the texture is soft. After that take a small portion of the mixture & stuff it with prepared coconut mixture & cover it up.
  4. Now deep fry all the Monda balls in hot oil. Drained out the excess oil & cool it down a bit. Then serve.

Yes, the title says it all… MANDA PITHA is not any simple Odia dish, it is quite connected to the cultural roots of one of the oldest culture of the country, or.
