Instructions to make Manipuri Alu Kangmet:
  1. Pressure cook the potatoes with little water and salt for about 3 whistle.
  2. Release the pressure naturally and then peel off the skin.
  3. Mash the potatoes to a coarse mixture.
  4. In a preheated skillet add oil.
  5. Add the dry red chillies and roast them till they are crisp.
  6. Turn off the heat and remove the red chillies into a bowl and allow them to cool.
  7. Once the red chillies are cooled add them to a mixer grinder and  grind the dry red chillies to a coarse mixture.
  8. Heat the same skillet with oil, then add ground chilli and mashed potato.
  9. Season it with salt and mix well to combine.
  10. Sauté for 5 minute and turn off the heat.
  11. Transfer the Manipuri Style Alu Kangmet into a serving plate and garnish with chopped coriander leaves.
