Combine the coconut milk, chicken stock and sugar in a large heavy-based saucepan and stir over medium heat. When the mixture comes to the boil, add the lemongrass, galangal and shallots and stir to combine. Bring the coconut milk to a boil and add the galangal, lemon grass, shallot and kaffir lime leaves. Add the chicken, salt and simmer slowly over low heat.
