The ingredients needed to make Guava kulfi:
- Prepare 1 litre Milk
- Take 500 gm Guava/amrud
- Take 1/4 cup Sugar
- Take 2 tbsp Milk powder
- Make ready 1/4 cup Condensed milk
- Get 1 tbsp Cornflour
- Get Saffron strands few
- Prepare 5-6 Cardamom pods
- Prepare Dryfruits few
Instructions to make Guava kulfi:
- Wash and chop the guavas and put in a blender.
- Make a puree and seive.
- Boil milk and put crushed cardamom pods.
- Keep stirring constantly and cook on medium flame till it reduces to half.
- Then add sugar and stir till it melts on low flame.
- Add condensed milk. Stir till all melts completely.
- Mix milk powder and cornflour in a bowl.
- Add water and make a thin slurry.
- Mix this slurry to the milk mixture.
- Simmer for 2-3mins and stir until all incorporated well and no lumps should be there.
- Switch off and fish out the cardamom pod skins and discard.
- Add saffron stands. Mix.
- Then add guava puree and stir well.
- Cool the mixture to room temperature and then put in the freezer for 2-3hours.
- Then blend for few mins till creamy.
- Add crushed dryfruits.
- Put in the kulfi moulds and freeze for 6-8hours or overnight.
- Demould and serve.
