  2. Make ready 125 g unsalted butter
  3. Take 300 g tapioca flour

  1. Heat the milk and the butter in a saucepan until frothing. Put the flour in a bowl or food processor. If using a food processor then add the hot milk and melted butter as mixing.
  2. Don’t worry if the mixture seems very sticky. It is a wet mixture and not at all like wheat bread dough. Should be sticky like play dough.
  3. Add the grated cheese and eggs and keep mixing until combined.
  4. Spoon mixture into little dollops on a pre-lined baking tray. You will need to keep them 5cm apart.
  5. Bake at 200 degrees for 30 mins until golden brown and puffed!
  6. Eat with herb butter and cold beer. Best served warm!
