The ingredients needed to make Braised Celery:
  1. Prepare 1 head celery, de-stringed and cut into about 5cm
  2. Get 30 g butter
  3. Get 1 tablespoon olive oil
  4. Take 1 medium onion, peeled and thinly sliced
  5. Make ready 220 g hot vegetable or chicken stock
  6. Prepare 1 tablespoon freshly chopped parsley
  7. Get to taste Salt

Steps to make Braised Celery:
  1. Melt the butter in a frying pan along with the olive oil. Then fry the onions for 3-4 minutes over a medium to high heat.
  2. Next add the carrots and cook for a further 3 minutes.
  3. Add the celery and continue to fry for another 5-7 minutes.
  4. Season with salt and pepper and then pour in the hot stock and cover with lid.
  5. Turn the heat down and simmer for 20-30 minutes depending how soft you like your vegetables. Add any celery leaves 10 minutes before cooking is complete.
  6. Then remove the lid and increase the heat to medium and continue to simmer till the liquid has reduced and thickened.
  7. Serve the celery with all the juices and sprinkled with parsley.
